Upon stepping into this Michelin-starred sushi restaurant in Tokyo, you’ll be greeted with a lovely, classic interior, and the classicism doesn’t stop there. Here the chef serves up one of the best Edomae sushi feasts in the city, following the time-honored traditions of the craft.
This means historic touches like these of red vinegar for the rice, and prawn nigiri served with seaweed. The chef also adds some personal touches, as in the tamagoyaki egg nigiri which caps off the meal with a bang. Instead of just cooking the egg in sweet sauce, he also stuffs it with a shrimp meat paste inside.
There are only 6 seats available at Jizozushi, all of them at the counter. As you can imagine for a Minato sushiya in the Michelin Guide, this means competition for spots is fierce. Be sure to make a reservation well in advance to secure yours.
