The town of Kuwana is synonymous with clams — its main product and export. These delicious shellfish are gathered from the river estuaries of the area, and Ise Bay. Located in the town itself, Hinode is an excellent place to try this seafood at its absolute freshest.
They present the clams in myriad forms, including clam shabu shabu. This is a kind of hotpot with a broth called kombu dashi which is made from dried kelp and dried, fermented tuna. The huge clams hold this broth in their shells as they cook, pooling nicely inside when you open them up.
Also on the omakase menu are clam tempura, clam porridge, mixed seafood noodles, and a wide range of other dishes.
