After achieving success in Tokyo, where the Azabu-Juban flagship store garnered a Michelin star for eight consecutive years, Tempura Yokota has expanded to the port city of Hakata in Fukuoka with the same meticulous execution for their tempura. This time, however, sushi is taking center stage.
The course interplays between the two signature dishes: The sushi here is simple but indulgent. The premium selection varies with the seasons, including options like aori squid (bigfin reef squid), bluefin tuna, and flounder. Each is crafted to highlight the natural flavors of the fish.
The tempura is treated with equal seriousness, too. The chef coats each piece in a light batter and cooks it for immediate serving. The temperature of the oil is carefully controlled, and tempura is removed from the fryer with near-second precision. The result is worth it; the tempura retains the flavor and texture of the original ingredient with an added, just-right crunch. The chef might fry classic varieties like shrimp or mushroom but expect the use of seasonal vegetables.
To visit, look for the red noren (traditional fabric divider) at the entrance of the multi-tenant building where the restaurant resides.
