Not content to just visit the markets and chat with brokers, chef Hiroshi Karashimi is known to go out on the boats with the fishermen themselves to gain a better knowledge of the fish he serves at his Michelin-starred Fukuoka restaurant. He opened Yasukichi after training in both Osaka and Kobe for many years, becoming an expert in dashi along the way.
About 13 pieces of seasonal sushi feature on his menu, alongside exciting appetizers like his famous steamed egg custard (“chawanmushi”). He makes a dashi stock blend specifically for this dish, and only adds eggs from a trusted farm who produce free range chicken fed on high quality grain.
Although he studied in other cities, Karashimi-san’s menu adheres to some of the local sushi preferences and customs of Fukuoka, so you won’t find an experience quite like this in Tokyo or Osaka. The drink menu is also a little unconventional, ranging from local sake all the way to champagne.
