Located in downtown Fukuoka, Sushi Matsumoto is marked by a half-length noren at the entrance and a cypress door. Upon entering, guests are greeted by an L-shaped counter that offers a spacious feel that sharply contrasts the often cramped quarters of typical sushi bars. The minimalist table settings, consisting only of a chopstick and a drink mat, are arranged across 12 seats, although private seating is also available.
There’s only omakase here for lunch and dinner, and the menu is not made overdone. Remaining faithful to traditional Edomae principles, diners need to entrust their meal to the chef’s expertise. The course begins with appetizers such as sashimi and soft-boiled octopus. It continues with a seasonal rotation of fish including medium fatty tuna from Shiogama, conger eel, and horse mackerel, reflecting the changes in available seafood throughout the year. Each meal concludes traditionally with soup and a dessert.
