Sightseers flock to Gion to glimpse the geiko and maiko. In one of its charming back alleys, a remarkable restaurant presents a new type of picturesque sushi worthy of the district’s beauty.
Gion Ichiho is the creation of Ichimura, who was enamored by the loveliness of Spanish pintxos and French canapes. Taking inspiration from their petite size, his take on sushi rolls — particularly mamezushi and temarizushi — are presented in a wooden bento box, crowned with sashimi, meat and seasonal vegetables. Sushi rice type is thoughtfully mapped with its topping; the rolls are finished with a coating of seaweed, tobiko, sesame seeds, or wrapping of thin ribbons of egg or seaweed. A final flourish of garnishes ties the knot, blooming the sushi sets into works of art.
The shop's budget set course is surprisingly affordable and includes a variety of Kyoto specialties and side dishes. Ichimura also pays close attention to portion sizes, ensuring that while the variety is abundant, the sushi rolls are formulated to leave diners feeling “70% full.”
The venue’s idiosyncratic charms extend to a modern-accented interior, with bentwood chairs, dramatic stone backsplash and cool granite counter — but rest assured, drinks are still native to Kyoto and service is, and always will be, sunshine-warm.
