Fuguryori Tomoe
The chef’s dedication to mastering fugu cuisine has made this restaurant one of the most famous pufferfish restaurants in Japan.
Restaurant Details
The fugu (blowfish or pufferfish) cuisine is one of the most upscale and rare in all of Japan. Because of its poisonous traits, restaurants need a certification to be able to serve fugu. On top of not having many fugu restaurants in the country, there are even lesser ones that are worth the trip and cost. Fuguryori Tomoe is undoubtedly one of the most famous fugu restaurants in all of Japan, and people from near and far travel here for their fugu fix.
The chef-owner of this restaurant, Kazuhiro Kame, strives to capture the true essence of fugu. The key to their fugu dishes is the art of aging. Before starting the aging process, the time and other factors are carefully calculated to ensure top quality on the reservation date. The dedication put into their craft at Fuguryori Tomoe is commendable, earning them a Michelin star in 2021.
