Recently, Chef Yoshii embarked on a pilgrimage to the birthplace of cassoulet — the hearty French stew that is one of Dialogue's signature dishes. He visited Toulouse, Castelnaudary, and Carcassonne, studying the dish and the connections (and conversations!) it can foster. This commitment to tradition shines through at Dialogue, from the rich depth of the cassoulet to the delicately balanced sauces.
