Daishinbo
Here at Mt. Haguro you can enjoy shojin ryori, the traditional Buddhist monk cooking of the Yamabushi mountain ascetics.
Restaurant Details
In the peaceful quiet, feeling the time flowing slowly, you can enjoy the blessings of Dewasanzan (the Three Mountains of Dewa). The dishes at Daishinbo, a stunning 350-year-old temple inn, are handmade one by one using local ingredients. You can experience a unique and spiritual atmosphere, eating in a shukubo (temple lodging).
The Yamabushi (mountain ascetics or monks) developed this cuisine during their long periods of mountain training when they would often isolate themselves for weeks or months in the mountains. This form of cooking utilizes ingredients naturally found on the Dewasanzan mountains and allowed them to sustain themselves without having to rely on the outside world. It’s a fresh, sustainable, and plant-based style of Japanese cuisine.
