At Daikonman in Shimokitazawa, you can enjoy both the Hiroshima and Osaka varieties of the famous dish — with and without soba noodles, respectively.


Watching the dish come together on a teppanyaki griddle pan — each heap of ingredients piled on top of the other, with a glaze of sauce, green onion, and bonito flakes on top — is a thing of beauty.
