The Japanese spiny lobster represents many things in Japan. Its curved back and molting process signify longevity, its hard shell resembles an armored samurai and its vibrant red color matches the festive spirits during special moments.
Founder Tsutsumi Sei-ichi was inspired to share this symbolism when he conceptualized Chunagon in 1974 as a homage to this luxurious shellfish. The name "Chunagon" was directly drawn from the title of a Heian-period book, "Tsutsumi Chunagon Monogatari." A few decades and five restaurants later, the restaurant has become a prime spot for opulent family gatherings and friend reunions. In this Namba branch, fresh Japanese spiny lobsters arrive nearly daily, kept live in a tank until they're ready for preparation.
The course is an indulgent shellfish-centric affair. The signature salad features tender boiled lobster meat with a special miso dressing, a recipe that has been passed down from one branch to another since the restaurant first opened.
For the fresh sashimi, lobster undergoes a meticulous pre-cooking ritual: a gentle wash with chilled sake, enhancing its inherent sweetness and texture. They're presented on vibrant plates, with the lobster shell set upright. Even the soup boasts rich flavors derived from this luxurious shellfish.
