The founder of Bentenyama Miyako Sushi was a disciple of legendary sushi chef Hanaya Yohei — said by some to be the originator of Edomae sushi. It’s now in the hands of the 5th generation, septuagenarian owner who carries on the traditions passed down since the doors first opened in 1866.
He also has a 6th generation training under him, ready to receive the baton, and his daughter working as the hostess. Together, they serve up one of the best sushi meals in Asakusa.
The menu is thoroughly traditional. Even things which we take for granted in modern sushi, such as sea urchins, are considered newfangled additions by real purists, so you won’t find them on the menu at this ultra-historical sushiya.
The flip side of this is that they still create historical dishes which have fallen out of favor in more modern restaurants. This means delicious, authentic treats like nigiri topped with squid which has been simmered in soy sauce.
