Heritage is his latest French gastronomic haven located in the belly of the downtown Roppongi area. The word reflects his vision to preserve and innovate French culinary culture, passing that spirit down to the next generation. At the tip of the spear to this mission is Murashima Teruki, the talented chef de cuisine from the two-Michelin-starred Esquisse in Ginza.
Today, creations in Heritage approach perfection and border religion: impeccably executed, timeless French cuisine with a progressive twist. The key is still in local, seasonal ingredients, like the amuse bouche of sea urchin and carrot mouse or botan shrimp tartare with Amur caviar crystals.
