Provenance is central to the concerns of the chef at this top-tier sushi restaurant in Minato, Tokyo. He sources his fish from all around the country, timed to coincide with the seasonal availability at the nation’s ports.
Once he has them in his hands, he prepares them in ways that create unbeatable layers of texture and taste. The scoring on the surface of his fish allows the flesh to fall apart in the mouth effortlessly.
Aside from the excellent nigiri, a great range of small side dishes is also on offer, of which the shrimp pickled in chinese rice wine is one of the best. All these things and more are why Amamoto holds not one but two Michelin stars, placing it among the very best of its kind in the city.
