Utilizing a traditional Japanese cooking method around the irori firepit, a meal at Ajizukuri Setsugekka is a heart-warming, communal experience. The hearth fills the room with a gentle glow, as the sumiyaki (charcoal grilling) dining experience commences.


The flavors of the season and Katashina Village’s local specialties—like Setsugekka’s locally-made tofu—are on full display. Their "Oze Marihime Dofu" is made with locally-grown soybeans and the water from "Oze no Sato Katashina Spring Water Group.” The sourcing of other ingredients, from chicken to vegetables, is also done with the same painstaking care that’s born out of love of Japanese cuisine and responsibility for preserving Japanese culinary culture.
