While fish and eggs are usually used to make sushi, in this Vegan Sushi Making Class, the instructor uses fresh plant ingredients and no animal products! Choose from two vegan sushi course options which also happen to be gluten-free. The vegan temari zushi set includes hand-rolled balls of sushi topped with veggies and maki-zushi (sushi rolls wrapped in nori, dried seaweed). The vegan chirashi zushi consists of perfectly cooked sushi rice topped with veggies such as avocado, lotus root, nori, carrots, shiitake mushrooms, and ginger. The resulting sushi from both of these vegan sushi courses is colorful, flavorful, and healthy!
Both vegan sushi courses include miso soup. Often the dashi (soup stock) used to make miso soup includes katsuobushi fish flakes but the cooking instructor will show you a different method of preparing dashi with traditional Japanese ingredients.

Remarks
While Ninomiya might seem a little out of the way, it’s a perfect stop if you’re on your way to see Mount Fuji or the hot springs of Izu or Hakone!
