Katsuobushi (dried bonito) is an essential component in many Japanese dishes: you might have seen the thin flakes "dancing" on top of an okonomiyaki pancake, or tasted its intense umami flavor in ramen or soups. A versatile ingredient with multiple uses, dried bonito is a key ingredient to unlock umami.
Prepackaged options abound, but freshly shaved flakes truly bring out a unique depth of flavor. The age-old practice of shaving katsuobushi by hand, a technique passed down through generations in Japan, is now rarely practiced outside professional kitchens, but you can experience it in this Tokyo home cooking class.
But the learning doesn't stop there. Using these flakes, your host will teach you how to prepare a delicious home-cooked meal, complete with staples like miso soup and tamagoyaki. Deepen your knowledge of Japanese cuisine and enjoy a delicious meal afterwards!
Itinerary
-Meet your host and walk to the experience venue
-Arrive at your host's home and go over the flow of the day over rice crackers and tea
-Learn the secrets of Japanese rice-making, including how to measure and wash the rice to achieve the perfect texture
-Your host will introduce you to Katsuobushi and bonito shaving techniques
-Learn to make Japanese staple foods and side dishes, including ichiban dashi, tamagoyaki, onigiri, tofu miso soup, and suimono (clear soup) with guidance from your host every step of the way
-Taste your delicious meal and finish the experience with ume sorbet. Your host will also share the recipes so you can recreate these dishes anytime!

Upon entering the instructor’s home, you'll be asked to remove your shoes and switch to guest slippers. Please be sure to bring your own socks.
Please arrive at the meeting point at least 10 minutes before the lesson begins.
