Home to the Tsukiji Outer Market and formerly to Japan’s most famous fish market, Tsukiji is often referred to as Tokyo’s kitchen. Among its big-name sushi restaurants, you’ll find Sushi Honten Noboru, where chefs not only turn the catch of the day into fresh rolls and nigiri but also eagerly share their sushi knowledge with enthusiasts from around the world.
During this private lesson with a pro chef at Sushi Honten Noboru restaurant, you will:
-Learn how to roll temaki and assemble nigiri sushi using seasonal ingredients (6 pieces).
-Grind real wasabi with a sharkskin grater and try it.
-Watch a professional chef sear and pound fish to make sushi, and taste 5 or 6 pieces made by them to see how they turned out compared to yours.
-Learn the differences between each knife used in a sushi kitchen, and which one to use for each dish.
-Receive a certificate acknowledging your sushi-making skills.
Stepping into the Sushi Honten Noboru restaurant, you’ll find details reminiscent of the woman who inspired it. After her parent’s restaurant burned to the ground in the bombing of Tokyo during WWII, Koto was determined to rebuild her family's legacy no matter the hardships. Thanks to her dedication and unwavering love for sushi, the business operations both resumed and expanded, now a conglomerate of 31 restaurants under the name of Tsukiji Tamazushi.
Sushi Honten Noboru, one of Tsukiji Tamazushi’s newest restaurants, opened in 2022 and is reservation-only. Its wooden interior and rich earthy hues give it a nostalgic, warm, and unique atmosphere, just like Koto had envisioned.

Meet directly at the Sushi Honten Noboru restaurant (approx. 5-minute walk from Tsukiji Station) Address: 104-0045 Tsukiji 1-9-4, Chuo-ku, Tokyo (on the second floor of the building).
Remarks
The chef does not speak English, so please come with an English-Japanese interpreter if needed.
The restaurant opens at 11:00 and is closed on Sundays and Japanese national holidays.
Booking requests will be accepted up to 6 months in advance. On the first day of each month, a new month will become available for booking.
Children 7 years and older are welcome to join.
