Soy sauce, miso, and ponzu (citrus-based soy sauce) are quintessential ingredients in Japanese cuisine, and Kyoto is home to several breweries and vinegar shops dedicated to creating only the highest quality products using traditional and modern methods.
This tasting adventure will take you to three of those Kyoto businesses, each with over 100 years of refining and production. The tour begins with a soy sauce and miso tasting at their respective breweries. The soy sauce brewery is famous for its delectable moromi soy sauce, and the miso shop has supplied miso to the Imperial Palace, marking it as one of Japan’s top-quality miso breweries.
Next, you’ll visit a vinegar shop, home to high-quality ponzu made through traditional methods and without harmful chemicals. Here, you can create your very own ponzu sauce and have it bottled to take home as a souvenir. You’ll cap off the tour with three signature cocktails made with soy sauce, miso, and ponzu.
