Japan’s famous umami flavors can be explained, in great part, by its fermentation practices. One of the best-known examples of fermented foods, alongside soy sauce and natto (fermented soybeans), is miso, a rich, savory paste made with soybeans and koji, known as Japan’s national mold. In this unique private workshop, you’ll learn about Japanese fermented foods, particularly miso, taste different kinds, and make your own.
Your miso-making journey begins at Amazake Cafe Kome Dreaming, a modern little cafe tucked in the upbeat district of Minato, only a few minutes from Tokyo Tower and Zojoji Temple. Known for its fluffy cookies and delicious fermented drinks, this cafe also offers a unique workshop that delves into the fascinating workings of miso.
You’ll first learn about the importance of miso for Japanese fermentation culture while tasting some of the most popular miso, including red miso, white miso, and barley miso. After getting acquainted with the luscious taste of miso and its intricate history, you will prepare miso with your own hands. Your hosts will walk you through mixing the mashed soybeans with koji to prepare the paste. Once finished, you will enjoy a miso soup with tofu, and you can take home the miso you made (about 700 g) as a souvenir. Your hosts will instruct you how to let it ferment so you always have delicious miso for various dishes.

The miso you make will need to be fermented at home for 3 to 6 months before it is ready to eat. You will receive more information on the date of the experience.
