Do you love fermented foods but don't know how to make them at home? In this dynamic and healthy cooking lesson, you'll learn about Japanese fermented cuisine and make Japan's classic teriyaki chicken meal with a fermented twist!


Japanese cuisine involves countless fermentation processes often centered around koji mold, known as the national fungus of Japan. Although not necessarily appetizing by name, this powerful mold adds a deep umami flavor to some of Japan's signature foods and condiments, like miso and soy sauce, and is a key ingredient for brewing sake. Your host will explain the importance of fermentation and koji in Japanese cuisine while preparing a fermented dish together!


You'll make a sweet and savory teriyaki chicken seasoned with fermented sweet sake for a crispy and fragrant finish. Once your work in the kitchen is over, you can sit down and enjoy a lovely meal complete with rice, soup, and fluffy tamagoyaki rolled egg omelet flavored with dashi fish stock!
