David is an Australian journalist who first noticed wasabi patches sprouting from clear running streams while on a hike in the hills of Okutama, far from the closest road. After becoming involved with the local community of wasabi farmers, he did something he never would have imagined—embarked on the journey of starting his own wasabi farm. Had a fabulous time.
Enjoyed sampling fresh wasabi in the Forrest.
David has inspired us to search out wasabi where ever we can, and to eat it in such a manner as to get the full flavour
