The original Tsukiji Sushi Sen is an institution of the old Tsukiji Inner Market — Tokyo’s most famous open-air market, which used to draw crowds looking to see Tokyo’s most famous wholesalers and chefs vie for the freshest, juiciest catch of the day on the slick auction floor.
