Built in 1899 for the Mitsubishi family, this former vacation home on the bank of the Sumida River — where each room has an unobstructed view of the water — boasts a serene Japanese garden with koi shimmering in its pond. Crossing the threshold, guests are invited to slip their shoes off and feel the warmth of Japanese hospitality.
Located just minutes from the legendary Tsukiji Market (known today as the Tsukiji Outer Market) and 10 minutes from the upscale Ginza shopping district, Tsukiji Jisaku boasts unparalleled access to fresh seasonal ingredients. Skilled chefs transform these ingredients into exquisite multi-course kaiseki menus. Of these menus, the highlight is the legendary tori-no-mizutaki, a soul-warming dish of chicken and vegetables simmered in a broth perfected over generations.
This unique mizutaki recipe, originally a medicinal food, was perfected by the restaurant’s founder in Fukuoka before reaching Tokyo in the Meiji era. The dish requires a meticulous focus on tradition, with a single master chef entrusted to preserve its perfect flavor. Chicken bones and carcasses are boiled for hours till the soup is rich, milky and full of flavor.
