Coveted for its omakase-style tempura and gentle hospitality, dining at Tempura Kozaki in Osaka is a true family affair. In the evenings, the chef-owner helms the kitchen and fryer, while his parents manage the table service.
His 10-course menu easily impresses with the seasonal medley of ingredients. Items are never overly lavish, but still of exceptional quality. Beyond the delicately fried prawns, sweet seabreams and shitake mushrooms, the chef sources unique wild vegetables such as cod sprouts and butterbur buds. Diners will often see him preparing a fresh batch of batter to ensure his creations are always fluffy and airy. Instead of a thick coating, the tempura is sheathed with a thinner layer that allows guests to appreciate the true form of the ingredients. The accompanying tempura sauce and salt are noteworthy for being refreshing and never overpowering.
Service is also thoughtful and kind. He serves one tempura at a time and, for non-Japanese speakers, makes an effort to explain the ingredients as best as he can. Be sure to opt for the course with kakiage — a fried shrimp and a vegetable fritter rice bowl, which gently closes the meal.
