Restaurant Details

A calm, upscale sushi restaurant in Nakagyo Ward within walking distance of Nijo Castle, Temarizushi to Nihoncha Souden constantly fills its space with the aroma of brewing tea. On the weekends, the store draws a line for people looking to surrender themselves to the sublime beauty of chakaiseki. Look up to the ceiling, where washi paper-framed light fixtures resembling inverted wagasa — traditional Japanese umbrellas — gently bask the dining space in an orange glow.


It is a store that combines timeless Kyoto elegance with modern tastes, as exemplified by its specialty, temarizushi. Often made for celebrations and holidays like Girl’s Day, these small, delicate spheres are crafted with health and tradition in mind. The creations are like edible works of art — perfectly shaped rice balls adorned with salmon, delicate drapes of fish roe, white fish, tuna and a luxurious crown of uni. The temarizushi emphasizes health, made with vegetables high in fiber, low salt content and body-nurturing seasonal ingredients. Presented on a tray, the colorful sets resemble dollops of paint, almost too pretty to eat. Side dishes include tempura, obanzai (Kyoto-style side dishes) and chawanmushi (steamed egg custard).


Along with sushi, the shelves lined with incense burners and quaint tea utensils speak to the restaurant’s dedication to tea. High-quality tea leaves like Karincha, Sencha and Gyokuro sourced from Rishouen tea seller in Uji, Kyoto are brewed using water from an iron kettle three times to extract the perfect blend of umami and astringency. The first infusion, brewed slowly at a low temperature, draws out the tea’s rich flavor. The second infusion, at a slightly higher temperature, balances umami with a touch of astringency. From the third brew onward, the flavor becomes light and refreshing.


Diners can expand their tea horizons further with unforgettable tea cocktail and alcoholic blends like sencha gin, tencha vodka, kukicha ume liqueur and roasted green tea with Maker’s Mark bourbon whiskey.
