Seasonal ingredients and flavors are breathed new life under the chef’s experienced hands. Fresh seafood like Ise lobster, Kensaki squid, Matsuba crab, clams from Kujukuri and an array of the freshest fish, such as cod, mackerel, conger eel, sea bass, and cutlass fish, are the stars of some of the dishes.
Soft-shelled turtles, different kinds of mushrooms, and caviar are also available on the menu.
Tastes are delicately handled in mild soups and flavor-infused mousse. There are no shortage of dessert option with their beautiful and decadent liqueur and fruit ice creams, and mochi (glutinous rice flour dessert).
