Local food takes center stage at this Michelin star sushiya in Amakusa. Pretty much all of the fish used here is caught locally — even the soy sauce comes from a local company. On their delicious nigiri you’ll enjoy a range of varieties, including sea bream, sea urchin, shrimp, conger eel, swordfish, salmon roe, and mackerel. Each is treated with delicate care by the chef, who even adds hidden cuts to the fish so that it falls apart perfectly in the mouth.


There are five counter seats available, and a private room for special occasions or larger groups. If you want a Michelin star sushi experience during your time in Japan, but don’t have the budget to splurge on a full dinner, why not opt for their very reasonably-priced lunch omakase?
