Local food takes center stage at this Michelin star sushiya in Amakusa. Pretty much all of the fish used here is caught locally — even the soy sauce comes from a local company. On their delicious nigiri you’ll enjoy a range of varieties, including sea bream, sea urchin, shrimp, conger eel, swordfish, salmon roe, and mackerel. Each is treated with delicate care by the chef, who even adds hidden cuts to the fish so that it falls apart perfectly in the mouth.
