Gone are the hinoki cypress counters, bright lighting, and shoji screens typical of a traditional Edomae sushi restaurant. Instead, dark woods and dim, romantic lighting create an intimate bubble that takes you away from the city's commotion.
That’s not to say Sushi Shiorian Shinjuku Higashiguchi is a total departure from its flagship store. Despite the aesthetic shift, the Shinjuku branch maintains the exceptional service and culinary excellence that earned its Ginza counterpart a Michelin star for three consecutive years, from 2018 to 2020.
Here, Edomae sushi is an art form crafted by master chefs with pedigrees from established sushi houses — and its making is akin to a live show, with each piece handed them directly from the counter. Each piece of nigiri combines top-tier seafood — meticulously selected — and perfectly seasoned rice with red vinegar, embodying the essence of traditional sushi craftsmanship.
