Many restaurants claim to elevate sushi, but few take it quite as far as Sushi No You Ya. At this Aichi sushi restaurant, a black geometric tripod that resembles contemporary art is placed in front of every guest, and each beautifully-prepared course is served atop this angular stand.
But sushi is elevated in less literal ways as well. Taking cues from contemporary French plating, the head chef — having trained in restaurants across Nagoya and Kanazawa — arranges his traditional Edomae sushi in a refreshing, aesthetically distinctive manner, whose sensibilities extend even to the plush interiors.
The restaurant doesn’t just look luxurious: the ingredients used are of the highest quality, including seafood freshly purchased from Nagoya’s famed Yanagibashi Central Market, wasabi from the country’s wasabi capital, Shizuoka Prefecture, and even rice from one of Japan’s deeply respected five-star “rice masters”.
