Yoshitake-san, the chef and owner of Sushi Miyakawa, came from humble beginnings in a countryside town in Hokkaido. In his youth, he traveled to Tokyo to study the art of sushi, and now he sits atop the sushi throne of his homeland.
His is the only sushi restaurant in Hokkaido to hold three Michelin stars — which he gained just three years after opening — and one of only five in Japan to have achieved the honor. Now it seems that everything he touches turns to gold.
His shop is situated near Maruyama Park in Sapporo. Drawing upon the best seafood that this cold corner of Japan has to offer, he serves up some of the most unbelievably delicious nigiri in the entire world.
