Chef Nishida brings about a unique spark of life to the seasonal produce of Kyushu Island and adds them to his traditional yet contemporary dishes.
While there’s an emphasis on seasonality at Shirogane Nishida, every dish in the different seasonal courses are created to represent the best of Kyushu. Expect a grand opening to any course with a fish dish in a unique dashi broth, presented on a ceramic bowl with Nishida’s family crest decorated on it.
