Kaiseki is all the rage in Japan, and foreigners who visit the country from all over the world will hunt for the most recommended one in town. This restaurant combines this traditional banquet dining style with the country's most classic dish: ramen.
Ramen Shibahama is known to be the first to offer a ramen kaiseki course in the form of the Komugi Zanmai set meal. It consists of three different types of ramen: mazesoba, a bowl of noodles without the soup and topped with chopped green onions and chashu; tsukemen dipping noodles; and ramen that’s either soy sauce or salt-based.
Chef Aiko purchases several kinds of wheat from all over the country and mixes them to create unique dough for the different types of noodles served in his course meal. This original technique can only be found at Ramen Shibahama, and every ramen lover should experience this mini kaiseki experience at least once in their life.
