Don't be fooled by their bakery shop exterior — Mendokoro Kinari is definitely a ramen-ya. Located near Higashi-Nakano Station, in a friendly neighborhood, this chic, cafe-vibe ramen shop is run by a husband and wife duo who are very passionate about serving seasonal bowls of ramen. It's not a surprising sight to see a line forming outside of the shop.
As the menu changes with the season, there are always new flavors to try. Their classics that are served all year round include dark shoyu ramen, shio ramen, and niboshi ramen. A summer menu includes cold white miso ramen and seafood broth cold ramen to beat the heat.
The broth of the ramen is made of various ingredients including duck and chicken bones. Depending on the ramen, the technique used to prepare the broth is different. For example, the normal shoyu broth is pulled through a low simmer so that the collagen and fat won't muddle the broth.
All menu items have the special option for extra toppings that come on the side rather than in the ramen bowl itself, so customers can enjoy eating them separately with a cold glass of beer — in summer especially. The toppings include duck chashu, chicken chashu, menma bamboo shoots, roasted seaweed, and blanched mustard leaves. A marinated soft boiled egg comes with the special option.
