It is a trailblazer of the new school Tokyo ramen — which is probably why it held a Michelin Bib Gourmand for five years.
Their own spin on the Japanese classic has been nicknamed “double soup,” a combination of fish and pork broth. Their most popular item, the Gottsu Ramen, has a deep, comforting umami from bonito flakes and spicy miso ground pork. The bowl is adorned with the usual suspects: boiled egg, char siu pork, scallions, and bamboo shoots.
The interior has a rugged elegance you’d appreciate as a tourist. It features a solid wood counter with a similar wooden slab above that houses the overhead lighting. A black-tiled wall serves as a backdrop for the ramen chefs working behind the counter.
