Where to begin? The name “Pi Greco” is the Italian translation of pi, the mathematical constant that never ends, mirroring chef Fukumoto Shunsuke’s boundless quest in his culinary journey. After a 5-year stint at Ristorante Hiro, he trained in Italy, working in the esteemed kitchens of Bersagliere and Via del Bongo in Lombardy and Da Bracali in Tuscany. In 2013, his relentless pursuit of progress culminated in Pi Greco, located in Osaka’s Nichitenma.
Pi Greco is a standout example of Italian dining done right by a Japanese chef. Many of the ingredients are local, such as the horse meat rump turned to tartare and rolled up with ricotta cheese in a crepe. Fregola, a pasta from the Sardinia region of Italy, is tossed with Awaji squid and artichoke puree. Beef shabu-shabu is paired with onion consommé and truffles. Dishes, too, are plated with such care that they verge on haute cuisine; cherry salmon is served on a fish-shaped platter, and the crepe is presented on a stone-textured plate.
