The world of chefs is not kind to Japanese women, but one figure is proving that change is possible: Horiuchi Sayaka. Born in Yamanashi Prefecture, Horiuchi draws inspiration from her deep connection to the natural beauty of her hometown's majestic mountains and seas. For the next 20 years, she honed her craft, mastering the art of filleting pufferfish, preparing soft-shelled turtles and transforming crabs into dishes worthy of a kaiseki feast, before being recruited as the head chef at Zaza in Kagurazaka.
Horiuchi opened her namesake restaurant in 2018 in Arakicho, where she not only lends her name but also infuses each dish with profound respect for ingredients from both land and sea. It’s why every element of a dish feels intentional, reflecting her belief that "all the ingredients I put on the plate are main roles."
Her kaiseki course, offered in an omakase style, showcases a range of produce sourced from across Japan. For instance, her conger eel shabu-shabu features both boneless and bone-in eel, paired with matsutake mushrooms and nankanage (deep-fried tofu) from Kumamoto Prefecture. Rustic dishes like chicken offal stew – her reputation-defining dish — is a nod to her hometown. During the summer, she grills sweetfish, and soft-shelled turtle is part of the equation in her perfectly executed chawanmushi. Even the comforting claypot-cooked rice, paired with Hokkaido clam miso soup, is a reflection of her hyper-local and singular approach.
While private rooms are available, the six counter seats are coveted, offering a front-row view of Horiuchi's culinary artistry in action.
