Locating this restaurant might be a bit more of a challenge compared to others, but it’s worth the mini scavenger hunt. Nishijin Fujiyoshi can be found on a hidden street in Nishijin town. This town has been extremely popular for manufacturing since ancient times. Owner and chef, Yoshikatsu Imai, has spent a decade learning and training at a well-established restaurant before becoming independent. He runs the restaurant together with his wife, and the both of them strive to create Japanese cuisine without boundaries.
On top of using seasonal ingredients to create the extraordinary dishes at Nishijin Fujiyoshi, the techniques of the skilled chef is what takes the cake. Instead of just merely preparing the dishes, chef Yoshikatsu will take a personal and unique interpretation of each ingredient on how to approach the dish. Combine that with the technique of “addition,” which means ingredients are layered to create a harmonious combination, the flavors of the resulting dishes are just mind blowing. Don’t miss out on bluefin tuna served with salted and thin-sliced daikon, seasoned with yuzu and green onions — this dish is said to be one of the most accurate definitions of Nishijin Fujiyoshi’s style of cuisine.
Many have said that it’s difficult to get a reservation as it’s always booked for months due to the restaurant’s popularity. It’s highly recommended to reserve well in advance to not miss out!
