The cities of Japan are some of the biggest in the world, due in part to the fact that the youth constantly flock from smaller towns and villages to the cultural and financial hubs of the country. Such was the case with Yukinori Yushioka. He hails from the Kyotango City, to the north of Kyoto, but moved down south in his youth to pursue a culinary career at some of the top-class kaiseki restaurants in the old capital.
His strong sense of pride in his birthplace never diminished, and he eventually decided to return home, taking a wealth of culinary experience with him. With all of the skills and knowledge garnered during his time in Kyoto, he founded Sakanaryori Nawaya.
The location is a little off the beaten track, but it’s more than worth the journey. All of the dishes served here are from the Tango region, so you won’t find an experience like this in any of the major tourist spots.
Their menu is a showcase of the bounty which the land and sea of the area provides. Favorites include female snow crab sushi with kelp and a spinach and sake infused soy sauce, and koshihikari rice.
