This traditional Japanese kaiseki restaurant in Fukuoka’s bustling Nishinakasu area is one chef’s base for sharing Japanese cuisine with the world. Hailing from Yamaguchi, chef Shugo Nagaoka sees himself as an ambassador for Japanese cuisine on the international stage, and he has been rewarded with a Michelin star for his forward-thinking, authentic cooking.


He prioritizes close relationships with those producing the food he serves, and seeks to represent them as best he can in everything he cooks. A traditional rice porridge dish and a claypot of rice bookend the meal. In between, you will be treated to dish after dish of seasonal delicacies showing the best that Yamaguchi and Kyushu have to offer. His most famous dish is the signature dried pollock roe.


These meals are served at a ten seat counter, or in two private rooms for those who prefer a little more privacy. With chefs like Nagaoka-san as its advocates, it’s no wonder that Japanese cuisine continues to be celebrated across the world.
