Morita
Go out of your way to try one of the very few sushi eateries that still upholds Kyushumae-style preparation.
Restaurant Details
Simple in decor with an unspoken elegance — the lacquer countertop matching perfectly with the bamboo counter — Sushi Morita can be found in a Kitakyushu, on the northernmost tip of Japan’s southern island, where sushi lovers flock to enjoy its one-of-a-kind nigiri.
Sushi Morita’s menu embodies true Kyushumae-style sushi which is rarely seen in current sushi restaurants even in Kyushu itself, making this restaurant a rare and welcome exception. On top of the additional complementing ingredients for their sushi, the main difference between Kyushumae-style and Edomae-style is in the temperature in sushi rice — Sushi Morita uses room-temperature sushi rice for every dish.
The creative combination of ingredients to come up with interesting dishes sets this sushi restaurant apart from others as well — putting together uni and caviar isn't a usual combo, but it works for Sushi Morita. Expect herring roe, gizzard shad, conger eel, ark clam, violet sea urchin, Japanese red tiger prawn and more.
The approach at Sushi Morita elevates the ingredients and gives them a new life, with a traditional and artistic Kyushumae-style sushi bursting with originality.
