The minimalism in the dishes at Mitsuyasu means there’s much less noise to cut through when enjoying their top-quality ingredients, with each dish just featuring the clear voices of a few carefully chosen components.
This approach proves that sometimes being inventive doesn’t have to mean adding a lot of unnecessary bells and whistles. Instead, it can mean just stripping things back to explore flavors with greater depth and clarity.
This ethos pays off marvelously in dishes such as bamboo shoots boiled with sake, and their signature sobagaki: a boiled handful of buckwheat dough, which is torn apart with chopsticks and eaten with white miso.
The two Michelin stars which Mitsuyasu holds are testament to the success of their philosophy, but the only way to appreciate it fully is to try it for yourself.
