From its humble start in Takikawa to becoming one of Japan’s largest jingisukan chains, Matsuo Jingisukan has been delighting diners with its delicious Hokkaido-style mutton barbecue since 1956.

Though the brand has expanded beyond Hokkaido to other regions of Japan, it continues to proudly serve the prefecture’s signature dish: jingisukan. A close relative of yakiniku, jingisukan—named after Genghis Khan—hails from Japan’s northernmost prefecture and features mutton or lamb grilled on a dome-shaped metal skillet.
