This ethos shines through in the cooking, for which the chef travels to a natural spring every day to draw water for his house-blend dashi stock.
This is the base of traditional Japanese cooking, and the chef at Kentan Horibe uses it to make a range of seasonal and regional dishes. The lunch set-menu is incredibly reasonable, so you’d be hard pressed to find a better value traditional meal in Kyoto.
