It’s led by a humble chef with a humble dream, who crafted something remarkable en route. His concept is encapsulated in the Japanese character “Kan,” meaning interval.” This idea reflects the chef’s aspiration to bridge the gap between traditional Japanese cuisine and his guests.
With a wealth of experience honed in prestigious restaurants, including an earlier venture in Jitsurei, the chef presents a carefully curated a la carte menu that mirrors the essence of a traditional Japanese meal. Each dish reflects the quiet elegance of Japan’s changing seasons. Starters might include a delicate salad dressed in mashed tofu, or shiraae, followed by exquisite sashimi platters and roasted bamboo shoots, with the meal often concluding with a simple yet refined soba dish.
