Originally owned by Hitoshi Furuta in 1978, Kaikatei is one of the most looked up to restaurants in Gifu Prefecture. Now, Kaikatei is managed by his oldest son, Takamichi, who has sworn to continue the Chinese culinary legacy of the restaurant.
The most famous dish is the caviar with cold rice noodles, inspired by Italian cuisine but deeply influenced by the Chinese style. Shark fin with Shantung soup, abalone liver with oyster sauce and Chinese white cabbage cream, fried dumplings with scallops and uni, and oyster sauce mixed with awabi liver are all classics of Hitoshi Furuta.
Kaikatei is always experimenting with different combinations of ingredients as well as creative techniques to elevate classic and contemporary Chinese cuisine. While the classic creative dishes, as well as seasonal ones, of Takamichi's father are still available on the menu, this current chef is always adding his own specialties, including sweetfish spring rolls for summer and tofu using tiger pufferfish roe for winter.
This Chinese restaurant brings in new customers with their fantastic reputation, and keeps regulars who continuously drop by for their constant fix of the classic Chinese cuisine, always anticipating the new flavors that will be added on the menu. Regardless, it's safe to say Kaikatei is extremely popular, and with good reason, being one of the best Michelin star restaurants in Gifu.
