This soba-ya is extremely special, too. The chef-owner grows his own buckwheat from a slash-and-burn style field, grinds it into flour, beats and kneads this into dough, then cuts and boils the noodles on his own. These noodles are the epitome of handmade. Because of the dedication behind every one, the number of bowls is limited daily, so people tend to rush down early to secure their spot.
