After backpacking through Europe to refine his skills in French kitchens, Chef Imai launched Hunter in 2017, a carnivorous eatery with a conceptual approach to cooking that borders haute cuisine.
True to its name, Imai approaches meat like a seasoned predator. Even the dining space resembles a hunter's cabin: wooden accents, a camo-patterned kitchen backdrop and a striking dried tree installation that soars up to the ceiling.
The menu is a meat lover’s dream, featuring duck, pork and beef alongside seasonal fares like wild boar and deer during the colder seasons. Flavor shines in every slow-cooked dish, like the homemade sausage or the charcoal-grilled duck drizzled with Manganji chili pepper puree. Rustic yet refined, dishes showcase his creativity and draw from his French culinary background. There’s the pate shaped like tree stumps and appetizers of cured meat, bread and cheese served on a wooden block that looks like a forager’s bounty.
Hunter also boasts its own "Hunter Spice," a proprietary blend of umami-rich ingredients, herbs, and spices, including sweet Basque chili pepper. Bring a friend who’s a serious gastronome, and sink your teeth some more.
