“Hoto” is a noodle soup dish that originates from Yamanashi Prefecture. At Hoto Fudou, they use their own homemade hoto, which is a flat style of udon noodle.
Chewy hoto noodles are stewed in a miso-based soup with pumpkin and other edible wild plants from Mt. Fuji. The simple taste of the dish brings out the natural flavors of the ingredients. You can also add “secret yakumi” to your hoto here. Yakumi is a spicy seasoning made of 7 different kinds of spices.
Besides hoto, Hoto Fudou also serves “inari” which is sushi rice wrapped in a fried tofu pouch. It’s gently sweetened with Japanese black sugar.
Another menu is “basashi,” which is a horse meat sashimi. Basashi is said to promote health and beauty since it is rich in vitamins and minerals. You can enjoy the fresh flavor of Basashi paired with garlic, ginger, and soy sauce.
The hoto is priced at 1,100 yen, inarizushi is 440 yen, and basashi is 1,100 yen.
