Hibiki aims to create a space to savor authentic ingredients and dishes in a serene and unpretentious environment. Each dish is expertly prepared by Chef Yoshizo Kokubo, who trained at Bellecour (a French restaurant), Yongjuro (specializing in Shojin cuisine at Kurama Temple), and Rihga Royal Hotel Kyoto before establishing his independent venture. He believes cooking serves as the catalyst for conversations and enjoys engaging with guests.
